Fish Palau

Ingredients
- 3 slices of wahu fish
- 1 small onion diced
- 4 cloves garlic
- 2 red chillies
- 1 tsp turmeric powder
- 3 cups basmati rice (rice cooker cups)
- 6 cups warm water (rice cooker cups)
- ½ tsp salt
- ½ chopped coriander
- 1 cup oil
Method
Step 1
Clean and wash the fish, Cut into small bite size pieces.
Step 2
Step 1 In a basin put the fish add turmeric powder, salt, garlic and chilli paste and 1 table spoon oil. Mix and coat the mixture in the fish and shallow fry the fish in a pan. Side aside the fried fish.
Step 3
Step 2 Clean and wash rice. Drain the water and put aside. In desired size pot heat the left over oil, sauté the onion then add garlic /chilli paste stir and add turmeric powder and stir.
Step 4
Then add the fried fish and rice and stir gentlly, add salt and 6 cups of water and sprinkle coriander on top.
Step 5
Low the heat and simmer for 20-30 minutes until the rice is cooked. Enjoy with salads.
Step 6
Note Divide the turmeric, garlic and chilli paste. Always use ratio 1 cup rice to 2 cups water. The best result for cooking Palau is to put the pot on hot plate (Tawa) and cook.
