Fruit Cake

Ingredients
- 1 ¼ cup plain flour
- 1 cup self raising flour
- 2 eggs
- Pinch of salt
- 1 tablespoon olive oil
- 4 table spoon margarine
- 100g soft butter
- 1 cup brown castor sugar
- 1 cup fruit mix
- 1 cup cherries (combination of red, green, and yellow)
- 2/3 cup liquid milk
- 1 teaspoon baking powder.
1 teaspoon vanilla essence
Method
Step 1
Grease a baking tin either round or square and line with paper.
Step 2
Pre heat the oven.
Step 3
Sieve flour, salt and baking powder into the basin add eggs, milk, sugar, oil, butter, margarine and mix well and beat for 5 minutes
Step 4
Than add fruit mix and cherries (save some fruits and cherries to spread of top)
Step 5
Pour the mixture in baking tin and baked for 1 hour at 160 degree normal oven Fan force 180 degrees

Tips: With ¼ cup flour from the ingredients mix it with some handful fruit mix and put it in the freeze overnight then add it to the mixture when preparing …this avoids the cake to sink. Always use brown sugar. Use skewer to check if the cake is cooked, it should come out clean. Not everyone’s fruit cake is perfect result. It depends in your faith. If you fail, don’t give up try again.
