Lemon Cake

1 cup plain flour
1 cup self raising flour
1 cup white castor sugar
2 tablespoon oil
100g soft butter
3 tablespoon margarine
1 teaspoon baking powder
pinch of salt
1 teaspoon vanilla essence
1 teaspoon lemon essence
2 eggs
2/3 cup milk
Method
Step 1
In a dish shift flour, salt and baking powder
Step 2
Add butter and rub to soft texture
Step 3
Add sugar, oil and margarine
Step 4
Add egg and milk
Step 5
Add vanilla essence
Step 6
Add lemon essence and combine well
Step 7
Beat for 10 minutes
Step 8
Pour in a line grease pan and bake for 60 minutes
Step 9
When it’s nicely baked put the cake on wire rack to cool completely
Step 10
It’s your choice to keep it plain or decorate with icing.
